3 cups flour
1/2 teaspoon salt
1 teaspoon baking soda
227 grams unsalted butter, room temperature
1 cup granulated white sugar
2 large eggs
2 teaspoons vanilla essence
No taste Red Gel Colouring

Beat the butter and sugar until light and fluffy. In a separate bowl mix the flour, salt, and baking soda.
Add the eggs and vanilla extract and beat until combined. Add the flour mixture and beat until you have a smooth dough.
Add red gel colouring and kneed through dough (be aware red colouring deepens over time)
Divide the dough in half and wrap each half in cling wrap, chill in the fridge for an hour.
On a lightly floured surface, roll out the dough to a ¼ inch thickness. Use Mickey shorts cookie cutter (available for hire) to cut out cookies and press in two yogurt covered raisins.
Bake cookies for 8-10 minutes at 180°.
