Ham & Pineapple Scrolls

Ingredients:

2 cups Self-raising Flour

90g butter, chopped

3/4 cup milk

1/4 cup pizza sauce

1 cup cheese, grated

150g sliced ham or bacon

1 can crushed pineapple-WELL drained

Instructions:

Sift flour into a large bowl, use fingertips to rub butter into flour until it resembles breadcrumbs. Make a well in the centre and then add milk.

Use a bread knife to chop milk through flour mix until it's just combined into a soft dough.

Turn onto a lightly floured surface and kneed. Use a rolling pin to roll out into a rectangle.

Spread the pizza sauce on top the top evenly with ham, cheese and pineapple.

Roll firmly into a log then cut into slices.

Bake at 220C for 15-20 minutes.

Jello Cookies

Ingredients:
1½ cups salted butter, softened
1 cup sugar+extra to roll
1 egg
1 tsp vanilla essence
3½ cups flour
1 tsp baking powder
4 boxes Jello, flavors of your choice

Instructions:
Preheat oven to 180 degrees.
Beat butter in large bowl until smooth and creamy. Add sugar and beat until l ight and fluffy. Mix in egg and vanilla.
Mix flour and baking powder in a separate bowl. Gradually beat in flour mixture 1 cup at a time.
Divide dough into 4 sections. Add a packet of jello to each section.  Knead  together with dough. You may want to add a small amount of gel colour to make the dough more vibrant.
Shape dough into small balls. Roll in white sugar. Place on paper lined cookie trays. Slightly flatten.
Bake 8 to 10 minutes.

Broken Glass Jello

Ingredients
4 boxes Jello
1  can sweetened condensed milk 
2 Tblsp unflavored gelatin

Instructions:
Dissolve each Jello mix into 1 cup of boiling water. Pour into container (a slice pan works well) and chill overnight.
Cut Jello into blocks and gently mix them together in a 9 x13" pan.
In a  separate bowl, sprinkle the unflavored gelatin into 1/2 cup cold  water. After the gelatin blooms, add 1 1/2 cup boiling water and  dissolve. Add
the can of sweetended condensed milk. Stir and cool. Pour cooled milk mixture over jello
and chill overnight.
Cut into blocks to serve.

Coconut Ice

Ingredients:
250g icing sugar
200g sweetened condensed milk
150g desiccated coconut
food colouring of choice (pink is traditional)

Instructions:
Put the coconut in a bowl, sift in the icing sugar and add the sweetened condensed milk. Mix together with a wooden spoon then kneed with your hand until mixture is firm.
Divide in half and add food colouring to one half, kneading until colour is thoroughly mixed in.
Shape each half into a bar of the same size and brush the top of one bar with cold water, place the other bar on top.
Sandwich the bars together and refrigerate.
When completely firm, cut into slices.

How cute and yummy are these?!

Ingredients:
Marshmallows
Orange Candy Melts (Can be purchased through us)
Milk Chocolate Melts
Kebab sticks

Instructions:
Skewer the marshmellows on the stick, stagger the marshmallows off-center on alternating sides as you push them onto the stick.
Melt the orange candy melts according to package instructions then hold each stick over the bowl while you cover the marshmellows. Allow excess to drip back into the bowl.
Place on wax paper and refridgerate to set.
Melt milk chocolate melts and drizzle over the tails with your spoon. Allow to set.

Optional:
1. Use Wilton candy flavors to flavor the candy melts (can also be purchased through Piece of Cake Tin Hire).
2. Or if you can find Kraft Caramel Melts put a layer of caramel between the marshmellows and the candy coating.
3. Swap the orange melts and milk chocolate for pink and purple to make it a Cheshire Cat tail.
4. Sprinkle with Sanding Sugar before the candy melts set to add sparkle.

Rainbow Cake

226 g butter, room temp
2 1/3 cup sugar
5 egg whites, room temp
2 teaspoons vanilla
3 cups flour
4 tsp. baking powder
½ tsp. salt
355 ml milk, room temp
GEL food colourings. (Liquid will not give you a deep enough colour)

Our Best Ever Butter Cream Frosting

Preheat the oven to 175°C. Grease as many 9” cake pans as you have (and then reuse for more layers
Sift together the flour, baking powder and salt. Set aside.
Cream the sugar and butter, then add the egg whites one at a time. Add the vanilla and mix until fully incorporated. Then, alternating between wet and dry, add the milk and flour mixture in two parts.
Divide the batter amongst 6 bowls (about 1 cup each), and then add the appropriate gel colour into each bowl. Pour into the pans and bake for 15 minutes each.

Assembly
Stack the layers in your preferred order and fill and frost as you would any other cake.

Jelly Bean Bark

Easy, yummy and eye catching.

Ingredients:
1 Package White Chocolate Melts (Cadbury tastes best)
1/2 cup Jelly Beans

Prepare a baking tray (min 1/4 inch deep) with baking paper. Melt White Chocolate Melts as per package instructions. Stir 1/4 cup jelly beans into melted chocolate.
Spread mixture onto baking paper and sprinkle with remaining 1/4 cup of jelly beans.
Allow to set. Break into pieces.

Jiggling Cupcakes

Ingredients:
1 packet Strawberry Jello
2 tsp. unflavored gelatin
250ml Cream
1 tsp. icing sugar
1 vanilla cupcake recipe (or box mix)
Sprinkles

Instructions:
 Make jello as per package instructions with unflavored gelatin.Set jello in a flat pan (approx 15x10x1)-allow at least 3 hours for jello to set.
Bake cupcakes according to cupcake recipe instructions, without cupcake papers. Cool.
Whip cream with icing sugar. Dip the jello pan in warm water for about 15 seconds and use a round cookie cutter to cut out your filling.
Assemble by cutting cupcakes in half and placing a dollop of cream on each half. Add jello circle and sandwich together. Top with a dollop of cream and some sprinkles

Tim Tam Truffles

Just try not too eat these all at once I dare you.
Ingredients:
1 packet of Tim Tams
100g Cream Cheese
1 pack Milk chocolate Melts
 
Instructions:
Crush the tim tams in a food processor (or plastic bag with a rolling pin). Add cream cheese and mix.
Roll into balls and refrigerate
Melt chocolate as per package instructions. Coat balls with melted chocolate. Allow to set.

For parties these make good Cannon Balls (Pirates) or Wrecking Balls (Construction)

Ingredients:
Marshmellows
Milk Chocolate Melts
M&Ms

Instructions:
Melt chocolate melts as per package instructions. Dip Marshmallows in melted chocolate and top with m&m before chocolate sets. Allow to set.
