Cadbury Creme Eggs
110g butter, softened
1½ cups caster sugar
1 tsp vanilla essence
1½ cups plain flour
1½ tsp baking powder
¼ cup cocoa
¾ cup, plus 2 tbsp milk
1 cup cream
chopped dark chocolate or melts
Freeze Creme Eggs overnight.
Preheat oven to 180° fan bake.
Cream butter, sugar and vanilla in an electric mixer until light and fluffy. Add eggs, one at a time.
Sift together flour, baking powder and cocoa and add in three lots, alternating with milk and beating well after each addition.
Spoon into prepared cupcakes cases until 1/2 full, add frozen Creme eggs and top with more batter.
Bake for 15 minutes.
Transfer to a wire rack to cool.
To make chocolate frosting, place cream and chocolate in a bowl and melt over a saucepan of simmering water. Stir until smooth, then set aside to cool. Beat with an electric mixer until creamy. Frost cupcakes.
