Choc topped Marshmallows

So simple its silly...
Ingredients:
Marshmellows
Milk Chocolate Melts
M&Ms

Instructions:
Melt chocolate melts as per package instructions. Dip Marshmallows in melted chocolate and top with m&m before chocolate sets. Allow to set.

Pikelets

Ingredients:
1 cup flour
1 tsp. baking powder
1/8 tsp. salt
1 egg
1/4 cup sugar
3/4 cup milk

Jam and Cream for serving.

Instructions:
Sift flour, baking powder and salt together. Beat egg and mix in sugar. Add egg and sugar mixture with milk to dry mixture. Stir until just combined. Heat a nonstick frying pan over a medium heat. Add a little butter to them pan and cook tablespoons of batter until bubbles appear on the surface of the pikelet. Turn pikelets over to lightly brown the other side. Serve warm with jam and cream.

Santa Strawberries

2 punnets large strawberries
225g cream cheese, softened
¼ cup icing sugar
1 teaspoon vanilla extract
mini choc chips (optional)

Instructions:
Rinse strawberries and cut off the steam. Remove the top, (for hat). Clean out the whole strawberry with a paring knife, if necessary (some of them are already hollow)
Cream the cream cheese, icing sugar, and vanilla until smooth. Add cream cheese mix to a piping bag. Fill the strawberries with cheesecake mixture.
Once strawberries are filled, top with the hats and decorate (use photo for reference) Use chocolate chips as eyes if desired.
If not serving immediately, refrigerate until serving.

Dirt Cups

Ingredients:
1 Package of Oreos
1/2 cup butter, softened
225g cream cheese, softened
1 cup icing sugar
1 tsp. Vanilla essence
2 packs of chocolate pudding mix
3 cups milk
1 litre whipped cream
Gummy worms

Instructions:
Remove centre from the Oreos and discard, crush remaining cookies into crumbs.
Cream butter, cream cheese, sugar and vanilla until smooth and fluffy. Set aside.
Combine the pudding mixes and milk until well blended, then fold in whipped cream.
Fold cream cheese mix and pudding mix together.

To assemble:
Start with a layer of Oreo crumbs followed by a layer of pudding mix, repeat and top with crumbs. Add gummy worms to garnish.

Cookie Dough Balls

220g softened butter
3/4 cup sugar
3/4 cup brown sugar
4 tbsp milk
1 tbsp vanilla
2 1/2 cups flour
1/4 tsp. salt
1 cup mini chocolate chips

Milk Chocolate Melts

Instructions:
To make the cookie dough: cream the butter and sugars in an electric mixer until light and fluffy (2 mins).  Add milk and vanilla until smooth. Beat in the flour and salt until just combined. Stir in the chocolate chips. Shape the dough into balls. Freeze overnight.

Melt Chocolate as per package instructions. Dip frozen cookie dough balls into the melted chocolate (a toothpick will help here). Lay on baking paper and allow to set.

Oreo Eyeballs

Ingredients:
22 Oreos
1/2 cup cream cheese, softened
12 chocolate drops
12 gummy ring lollies
White chocolate Melts

Instructions:
Crush the Oreos into fine crumbs in either a food proccesser or by putting them in a bag and hitting them with a rolling pin.
Combine crumbs and cream cheese.
Roll into 12 balls and place on a tray lined with baking paper. Push your thumb into the top of each ball to make a shallow dip. Refrigerate for 1 hour.
Press chocoate drops into centre of gummy lolly to make pupil and iris for each eyeball.
Melt White chocolate melts as per package instructions, Dip balls into melted chocolate (a toothpick can help with this) return to tray.
Set gummy lolly iris into the dip before chocolate sets.

Tip: Oreos can be replaced with crumbled cake of any flavour.

Chocolate Crackles

Ingredients:
50g butter
50g icing sugar
80g cornflakes
2 Tblsp. golden Syrup
2 Tblsp. cocoa powder

Instructions:
Melt the butter and golden syrup in a saucepan on low heat, add cocoa powder and icing sugar. Mix well until smooth, remove from heat and stir in cornflakes. Fill cupcake cases with mixture and leave to set,

Lego Cookies

Ingredients:
3 cups flour
1/2 teaspoon salt 
1 teaspoon baking soda 
227 grams unsalted butter, room temperature 
1 cup granulated white sugar 
2 large eggs 
2 teaspoons vanilla essence
 
Instructions:
Beat the butter and sugar until light and fluffy. In a separate bowl mix the flour, salt, and baking soda.
Add the eggs and vanilla extract and beat until combined. Add the flour mixture and beat until you have a smooth dough. Divide the dough in half and wrap each half in cling wrap, chill in the fridge for an hour.
On a lightly floured surface, roll out the dough to a ¼ inch thickness.
Bake cookies for 8-10 minutes at 180°.
 
Royal Icing:

Ingredients:
2 large egg whites 
2 teaspoons lemon juice 
3 cups icing sugar, sifted
Gel colouring
 
Instructions:
Beat the egg whites and lemon juice in an electric mixer. Add the sifted icing sugar and beat until smooth. To get the right consistency, add more icing sugar or water. Add gel colouring. Use immediately or put in an airtight container as the icing will harden when exposed to air.

Add m&ms to complete the bricks
